das Vernetzungskonzept Dairy 4.0 an 17.
Ein ähnliches Konzept verfolgen auch Verdouw
et al. 18 über eine Virtualisierung
des IoT-Konzepts entlang der gesamten
Prozesskette am Beispiel der fischverarbeitenden
Industrie. Als bislang konsequenteste
Umsetzung eines CPS wurde das Projekt
„MyJoghurt“ des Lehrstuhls für Automatisierung
und Informationssysteme (TU München)
in die Online-Landkarte der Plattform
Industrie 4.0 aufgenommen 19.
In der Lebensmittel-Prozessierung bieten
IoT Konzepte über miniaturisierte Sensortechnik
und autonom parametrierbare Anlagen
große Potentiale in Hinblick auf adaptive
Prozessierung (Electronic nose & tounge;
Sensorik für Wasser-/Fett-/Proteingehalt
bzw. Mikronährstoffe; Lab-on-a-Chip), dynamische
Anlagenplanung (Integration in SCADA/
Smart factory) oder Aspekte der Food
Safety (Dokumentation Reinigung; Fremdkörper/
Schadstoff-/Allergendetektion).
Konkrete Umsetzungen dieser Aspekte sind
jedoch noch nicht publiziert. Ein erster Ansatz
in diese Richtung wird durch das vom
Autor betreute Projekt „Effiziente adaptive
CIP-Tankreinigung durch Umsetzung
eines Agenten-basierten Internet-of-Things
(IoT)-Ansatzes (AIF-02089-20-BG)“ geleistet.
Darin werden die Aktoren und Sensoren
einer CIP-Behälterreinigung als autonome
IoT-Agenten realisiert, die in ihrem Zusammenspiel
selbsttätig eine Optimierung der
Reinigungsparameter (Temperatur, Strahlgeschwindigkeit,
Bahnplanung, etc.) erzielen.
Zusammenfassung
In der obigen Darstellung wird ersichtlich,
dass die technologischen Grundlagen
für die Implementierung von IoT-Konzepten
vorhanden sind. Erste Anwendungen
in Supply chain, Food Tracing, oder Smart
Farming wurden auch schon umgesetzt
und demonstrieren die Potentiale des Ansatzes.
Bei der Prozessierung, bzw. in der
Lebensmittelproduktion versprechen erste
Ansätze Verbesserungen im Real-time Monitoring,
der adaptiven Prozessierung sowie
der Energie & Ressourceneffizienz. Für die
Umsetzung sollte dabei das IoT-System immer
als Ergänzung oder Weiterentwicklung
bestehender Automatisierungskonzepte
gedacht werden, um die Vorteile beider
Welten zu kombinieren und reibungslose
Transitionen zu ermöglichen sowie Retrofitting
Konzepte anzubieten.
Diese Integration von bestehenden SPSLösungen
lässt sich mit offenen IoT-Architekturen,
-Plattformen und -Standards gut
realisieren und dient dazu, die Attraktivität
für den Mainstream der Landwirte und Lebensmittelunternehmen
sicherzustellen.
